- The Schopf family farm was established sometime in the late
1800's. One of the larger barns built in the early 1900's is still standing today. The Schopf family has always
been a leader in farming technology - one of the first dairy
farms in Door County to have a "milking parlor"!
Dennis and Roxanne established Schopf's Hilltop Dairy in the 1980's and have carried on the family tradition as
innovaters in the dairy industry. They have taken the farm from 50 cows to a 575 cow dairy. Examples of progressive
management applied over the years include: establishing a labor force, balancing nutritional feeding, and improving
productivity.
| In the year 2000 Schopf's decided to set some high goals in an industry
hit hard by a declining dairy economy, high cost of production, and changing weather patterns. |

Door County provides a unique opportunity to use some of the dairy's
assets as an attraction and an educational tool. |
| Located in a mecca for tourists (who have always shown interest in the
dairy) the Schopfs decided to "open the barn doors" by becoming hosts to curious kids and adults alike.
Schopf's Hilltop Dairy now includes a classroom, tour facilities and a complete onsite ice cream processing center.
Their innovative mix of dairying and tourism has been recognized in numerous professional journals and magazines. |
